Kayla’s Decadent Chocolate Cake with Oreo Cream Cheese Frosting

So it was my turn on the write to cook and I chose to bake a decadent chocolate cake with Oreo cream cheese frosting! It was my second time making this cake and it went excellently! I got the idea from a friend making an ice cream cake but there wouldn’t be enough time for ice cream so I substituted with cookies and cream cream cheese icing. The cream cheese icing is the icing my friend puts on all cakes and cupcakes and that’s why I chose this recipe!

Cake Ingredients:

• 200 g butter (I used 2 sticks)

• 200 g dark chocolate

‣ 1 Hershey’s Kitchens unsweetened baking bar

‣ + 1 Lindt sea salt chocolate bar

• 8 eggs

• 200 g sugar

• 100 g flour

• 1 tsp salt

• 1 tbsp vanilla extract

Cake Directions:

  1.  Preheat oven to 350 degrees;
  2.  Line the bottom of 2 round cake pans with parchment paper and spray bottom and sides with  baking spray;
  3.  Melt butter and chocolate in a saucepan over very low heat, stirring continuously until     chocolate has melted. Set aside to cool;
  4.  In large bowl, whisk together sugar and eggs;
  5.  Combine sugar and eggs with the melted chocolate mixture;
  6.  Add salt and vanilla extract
  7. With an electric mixer, SLOWLY add flour to avoid clumps and mix until fully combined;
  8. Pour equal amounts into both baking pans;
  9.  Bake at 350 degrees for approximately 15-20 minutes;
  10.  Let cool for 10 minutes, then remove from pans to cool completely.

Remember—make sure you allow the chocolate to cool before adding it to the eggs!

Icing Ingredients:

• 1/2 cup unsalted butter (1 stick) at room temperature

• 8 oz. Philadelphia cream cheese (1square package) at room temperature

• 5 cups icing sugar

• 1 tsp pure vanilla extract

• 15 Oreo cookies crushed and froze

Icing Directions:

  1.  In a VERY LARGE BOWL, combine butter, cream cheese, and vanilla extract;
  2. Small bowl= sugar tornado in the kitchen!
  3.  With an electric mixer, starting on LOW speed, slowly add the icing sugar. You may only need 4 cups rather than 5;
  4. When desired consistency is reached, add frozen Oreos and mix well;
  5. Spread icing between layers, and over cooled cake, top with caramel bits if desired,
  6. cool in fridge for 15 minutes and enjoy
