Coconut Dark Chocolate Chip Cookies

Even though the children in your life may say they don't like coconut, rest assured that the coconut in "Coconut Dark Chocolate Chip Cookies"  is virtually indestinguishable and gives these cookies a moist chewy quality. Where many chocolate chip cookies bake up either too flat and floppy or hard and hateful, this recipe offers a chewy cookie that holds its shape.  

The secret is definitely the coconut and adding a little extra flour and vanilla to the recipe. One thing to remember is that before you make these cookies you should check to make sure people actually like chocolate....

Of course, when you use a prehistoric staff-room oven the results can be less than spectacular...

Make sure you add one extra teaspoon of vanilla and an extra 1/4 cup of flour. One cup of chocolate chips will do and semi-sweet is just fine! If you have a prehistoric oven make sure you don't over cook them.
