Daphne's Marvelous Mac 'n Cheese
I decided to cook mac n cheese, because my mom cooks it all the time. She likes to change it up and use a lot of recipes, but this one is my favorite by far! It takes the least amount of time and tastes the best.
Preheat the oven to 325 degrees and grease a 9 by 13 baking dish.
Boil a large pot of water and salt. Add dry pasta and cook 1 minute less than directed on the package.
Grate cheese and toss together to mix, then divide into three piles. 3 cups for sauce, 1 ½ cups for the inner layer, and 1 ½ cups for the topping.
Melt butter in a large saucepan over medium heat. Sprinkle in flour and whisk to combine. Mixture will look like wet sand. Cook for one minute. Slowly pour in milk/half and half, while whisking consistently. Pour in the remaining half and half, whisk until smooth.
Continue to heat on medium until thick.
Stir in spices and 1 ½ cups of cheese. Stir until it’s melted. Add another 1 ½ cups of cheese, and stir until completely melted and smooth.
In a large bowl, combine drained pasta with cheese sauce, stirring to combine fully. Pour half of the mixture into the prepared baking dish. Top with 1 ½ cups of cheese. Pour the other half in and top with 1 ½ cups of cheese.
Bake for 15 minutes, until cheese is bubbly and golden brown.
