AJ's Gluten-Free Mac & Cheese
When my mom found out that she had allergies she loved mac and cheese but since she was allergic to gluten and cow she had to change every thing that was gluten to gluten free and every thing that came from a cow to a goat or sheep. And that is how this family recipe was born.
For gluten free mac and cheese you will need 6 cups of water, gluten free macaroni, 2 and a quarter cup of goat or sheep cheese, 2 tablespoons of vegan butter, 2 tablespoons of cornstarch, 1 and a half cups of ripple vegan milk, a quarter teaspoon of sea kelp delight, a quarter teaspoon of Cajun seasoning, a dash of cayenne pepper and extra cheese for the top.
Preheat the oven to 350 degrease. Spray 1 and a quart dish with cooking spray. Bring to a rolling boil in a medium pot then add the 6 cups of water. Add the gluten free macaroni and cook just until tender about 9 minutes. While the pasta is cooking start the cheese sauce in a small or medium pot melt the butter and the add the cornstarch to make it rue. Add the milk and the seasonings. Add the grated goat or sheep cheese drain the pasta and add the cheese sauce to it and fold until well mixed. Pour it into prepared dish and bake until golden and bubbly about 20 minutes. Enjoy!!
