AJ's German Apple Pancake

I chose to make German apple pancake because my mom has always made it for me, and I’ve always loved it. If you were to bake one and left me home alone with it, I would eat it all.

RECIPE

Ingredients:

  •   10 Eggs

  • 4 Teaspoons of vanilla extract

  • 1 cup plus 2 tablespoons of all-purpose flour

  • ¼ teaspoon of fine sea salt

  • 3 tablespoons of unsalted butter

  •  4 apples, peeled, cored & cut into small wedges

  • 2 teaspoons of ground cinnamon

  • Raspberries optional

  • Whipped cream optional

In a blender combine the eggs, vanilla and the ½ cup of granulated sugar and blend it for 5 seconds. Add the flour, baking powder and sea salt and mix until smooth maybe 10 more seconds

Preheat oven to 375 degrees Fahrenheit. Place a 10-inch frying non-stick frying pan over medium heat on the burner and add the butter. When the butter has melted add the apples and sauté occasionally stirring, until soften. Sprinkle the apples with the cinnamon and the remaining 2 tablespoons of granulated sugar. Stir together until all apples are glazed.

Spread the apples evenly in the pan and pour the batter slowly over the top, so the apples stay in place. Reduce the heat of the burner to medium low and cook for about 8 minutes. Transfer the pan into the oven and cook for about 10 minutes longer.

Remove from the oven, invert a flat serving plate over the pan and gently lift the apple pancake out of the pan. Cut the pancake into even servings and add the raspberries and whipped cream.
