Grandma Mancuso's Famous Cheese Pie
I chose this recipe because it is a family recipe that has been passed down a few generations. It has been passed down from my great grandma Mancuso all the way down to me. It is something we use every Christmas and Thanksgiving. We all love this and it is very soft and sweet.
Grandma Mancuso’s Cheese Pie Recipe
Crust
1 ½ cup Graham Crackers crumbs (or crushed graham crackers)
6 tbsp Melted Butter
3 tbsp Sugar
¾ tsp cinnamon
Filling
1 lbCream cheese
½ cup Sugar
3 Egg yolks (keep egg whites separate)
1 tbsp Lemon juice
3 Egg whites
Top Layer
½ pint Sour cream (8 ounces or ½ container / ½ cup)
2 tbsp Sugar
1 tsp Vanilla
Method
Pre-heat oven to 375 degrees
Mix together the crushed graham crackers, melted butter, sugar, cinnamon for the crust. Press into the bottom of a pie dish.
Mix together cream cheese, sugar and egg yolks for the filling in bowl.
Mix in lemon juice with the cream cheese mixture.
In a separate bowl, beat the egg whites until stiff.
Gently fold in the egg whites in the cream cheese mixture.
Pour cream cheese mixture into the pie dish.
Put pie in the oven for 20 minutes.
While baking, mix sour cream, sugar and vanilla together for top layer.
After 20 minutes, gently remove the pie from the oven. The pie will not be fully cooked.
Increase oven temperature to 400 degrees.
Gently (but quickly) spread the sour cream layer on the pie.
Place back in the oven for 15 minutes
Remove pie from oven and allow to cool.
Once cool, place in refrigerator
