Andrew's Mexican Fiesta!
During my week on the Write to Cook I made guacamole and a nacho dip. I chose these two foods because I love having them at my cottage in Canada during the summer. Throughout the year, I have guacamole all the time because of how much I love it. Unfortunately I don’t have the nacho dip as often. I generally only get to have it during the summer, when we have friends and family visiting us at our cottage. I wanted to share this recipe with my friends and fellow chefs. Everything went just as planned and couldn’t have been better. This was a great choice and I hope I can do something like this again.
Guacamole
Three ripe avocados (mashed)
Juice from half of a lemon or a lime
Chopped fresh cilantro
Chopped white onion
Salsa
Salt
Combine the mashed avocados with lemon/lime juice, cilantro, chopped onion, salsa and salt to taste.
Nacho Dip
One 8 oz. packet of cream cheese at room temperature
3/4 of a cup of sour cream
One packet of taco seasoning mix (I use the low sodium version)
Salsa
Grated cheddar cheese
Sliced scallions
Place the cream cheese in a bowl and blend with a hand mixer until fluffy. Add the sour cream and taco seasoning mix and blend well with a hand mixer. Spread this mixture into a glass 8x8 (or similar) pan. Place a layer of salsa on top, followed by a layer of grated cheddar cheese. Finish by sprinkling the sliced scallions on top.
Serve the dip and guacamole with nacho chips (I like the lime flavored ones). Enjoy!!
